    Cook the Meats

    In a skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a spatula. Cook for about 5 minutes until browned. Add the meatballs and ham, cooking until they are heated through. Set aside.

    Sauté the Vegetables

    In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes. Add the roasted red peppers and cook for an additional 2 minutes. Remove from heat and set aside.

Cooking the Omelet

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet, add a little more olive oil if needed, and pour in the egg mixture. Allow it to cook undisturbed for about 2 minutes, or until the edges start to set.

    Add the Fillings

    Once the edges are set, add the cooked meats and sautéed vegetables evenly over one half of the omelet. Sprinkle mozzarella cheese on top.

    Fold and Finish Cooking

    Carefully fold the other half of the omelet over the fillings. Cook for an additional 2-3 minutes until the cheese is melted and the omelet is fully cooked.

Serving

    Plate the Omelet

    Slide the omelet onto a plate. Top with warm tomato sauce before serving.
