    Prepare the Ingredients

    Dice the onion and tomatoes, slice the black olives, and crumble the feta cheese. Set aside.

    Cook the Vegetables

    In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes, until they become translucent. Then, add the diced tomatoes and sliced black olives, cooking for another 2 minutes until the tomatoes soften.

    Whisk the Eggs

    In a mixing bowl, crack the 4 large eggs and add 0.5 tsp of salt and 0.25 tsp of black pepper. Whisk together until the mixture is smooth and well combined.

    Combine and Cook the Omelet

    Pour the egg mixture over the sautéed vegetables in the skillet. Let it cook undisturbed for about 3-4 minutes, or until the edges start to set. Gently lift the edges of the omelet with a spatula to allow uncooked eggs to flow underneath.

    Add Feta Cheese

    Once the omelet is mostly set but still slightly runny on top, sprinkle the crumbled feta cheese over one half of the omelet. Fold the other half over the cheese and cook for another minute, until the cheese begins to melt.

    Serve

    Slide the omelet onto a plate and cut it in half. Serve hot, garnished with additional black olives or tomatoes if desired.
