Gnocchi

Method

Prepare Gnocchi

    Cook Potatoes

    Boil the Russet potatoes in a large pot of salted water until fork-tender, about 20-25 minutes. Drain and let cool slightly.

    Mash Potatoes

    Peel the potatoes and mash them in a large bowl until smooth. Allow to cool completely.

    Form Gnocchi Dough

    Add the flour, egg, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

    Shape Gnocchi

    Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces. Optionally, use a fork to create ridges on each piece.

    Cook Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare Vodka Sauce

    Sauté Aromatics

    In a large skillet over medium heat, heat the olive oil. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 5 minutes.

    Add Spice and Vodka

    Stir in the crushed red pepper flakes and vodka. Allow to simmer for about 3-4 minutes, letting the alcohol evaporate.

    Incorporate Tomatoes and Cream

    Add the canned crushed tomatoes, heavy cream, salt, and black pepper. Stir well and let the sauce simmer for about 10-15 minutes until it thickens slightly.

    Finish the Sauce

    Stir in the grated Parmesan cheese and chopped fresh basil into the sauce. Adjust seasoning to taste.

Combine and Serve

    Combine Gnocchi and Sauce

    Add the cooked gnocchi to the vodka sauce, gently tossing to coat the gnocchi evenly.

    Serve

    Serve the gnocchi alla vodka hot, garnished with additional Parmesan cheese and fresh basil if desired.
