    Prepare the Beef

    In a large skillet over medium-high heat, add a little olive oil and heat until shimmering. Add the shaved sirloin beef and cook until browned and just cooked through, about 3-5 minutes. Remove from heat and set aside.

    Assemble the Sandwich

    Slice the hoagie rolls lengthwise. Layer the cooked shaved sirloin beef evenly across the rolls. Top with sautéed mushrooms and a generous amount of mozzarella cheese.

    Sauté the Mushrooms

    In the same skillet used for the beef, add 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms, minced garlic, salt, and black pepper. Sauté until the mushrooms are soft and golden brown, about 5-7 minutes. Remove from heat and set aside.

Au Jus

    Make the Au Jus

    In a small saucepan, combine the beef broth, Worcestershire sauce, onion powder, garlic powder, salt, and black pepper. Bring to a simmer over medium heat and let it cook for about 10 minutes. Adjust seasoning to taste.

Final Assembly and Serving

    Melt the Cheese

    Preheat your oven broiler. Place the assembled hoagie rolls on a baking sheet and broil for 2-3 minutes, or until the mozzarella cheese is melted and bubbly.

    Serve the sandwiches hot with a small bowl of au jus for dipping.
