Beef Preparation

Prepare the Beef
Season the sirloin beef with salt, black pepper, and garlic powder. Rub the seasonings evenly over the entire surface of the beef.

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Add the seasoned beef and sear for about 3-4 minutes on each side until browned. Remove from heat and let it rest.

Slice the Beef
Once the beef has rested, thinly slice it against the grain into very thin pieces.
Pepper Relish

Chop the Peppers
Finely chop the green bell pepper, red bell pepper, and pepperoncini peppers. Mince the garlic cloves.

Combine Ingredients
In a bowl, mix the chopped peppers and minced garlic with olive oil, red wine vinegar, salt, and black pepper. Stir well to combine.

Let the Relish Rest
Cover the bowl with plastic wrap and let the relish sit at room temperature for at least 30 minutes to allow the flavors to meld.

Simmer the Au Jus
Allow the au jus to simmer for about 10 minutes, stirring occasionally, until it is heated through and well combined.

Assemble the Sandwich
On each Italian roll, layer the thinly sliced beef, then top with the spicy pepper relish and a slice of provolone cheese.

Serve the sandwiches with a side of warm au jus for dipping.
