    Prepare the Vegetables

    Chop the mushrooms, onion, and green bell pepper into small pieces. Rinse the spinach and set aside.

    Beat the Eggs

    In a medium bowl, crack the eggs and beat them until well mixed. Season with salt and black pepper to taste.

Cooking

    Sauté the Vegetables

    Heat the olive oil in a non-stick skillet over medium heat. Add the chopped mushrooms, onion, and green bell pepper. Sauté for about 5 minutes, or until the vegetables are soft.

    Add Spinach

    Add the spinach to the skillet and continue to sauté for another 2-3 minutes until the spinach wilts.

    Cook the Omelet

    Pour the beaten eggs over the sautéed vegetables. Tilt the skillet to evenly distribute the eggs. Cook for about 3-5 minutes until the edges begin to set.

    Add Cheese

    Place a slice of American cheese on top of the omelet and cover the skillet with a lid. Cook for an additional 2 minutes, or until the cheese melts and the eggs are fully set.

Serving

    Plate the Omelet

    Gently slide the omelet onto a plate. Slice the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado and arrange it on top of the omelet.
