Method

Preparing the Calamari

    Prepare the Calamari

    Rinse the cleaned calamari under cold water and pat dry with a paper towel.

    Mix the Coating

    In a bowl, combine flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off excess flour.

Frying the Calamari

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Calamari

    Carefully add a few calamari rings at a time to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Tomato Sauce

    Cook the Garlic

    In a sauce pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Add crushed tomatoes, oregano, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally. Add fresh basil before serving.

Making the Lemon Garlic Sauce

    Combine Ingredients

    In a small bowl, mix Greek yogurt, lemon juice, minced garlic, and chopped parsley. Season with salt to taste.

Serving

    Serve the Dish

    Plate the fried calamari and serve hot with tomato sauce and lemon garlic sauce on the side.
