Cooking the Beef and Vegetables

Sauté the Onions and Mushrooms
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they become translucent, about 5 minutes. Add the sliced mushrooms and continue to sauté until they are tender, another 5 minutes. Remove the vegetables from the pan and set them aside.

Making the Au Jus

Prepare the Au Jus
In a saucepan, combine 2 cups of beef broth, 1 tablespoon of soy sauce, 1 tablespoon of Worcestershire sauce, and 2 minced garlic cloves. Bring to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
Assembling the Sandwiches

Build the Sandwiches
Slice the Tuscan rolls in half. Place a portion of the beef mixture onto the bottom half of each roll. Top with shredded mozzarella cheese and place under the broiler for 2-3 minutes, or until the cheese is bubbly and melted.

Serve with Au Jus
Serve the sandwiches warm with a small bowl of au jus on the side for dipping.
