Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Prepare the Meats
In a skillet over medium heat, cook the Italian sausage links until browned and fully cooked, about 8-10 minutes. Remove from the skillet, slice, and set aside. In the same skillet, add the chicken breast, season with salt and pepper, and cook until blackened and cooked through, about 6-8 minutes per side. Remove and slice into strips.

Prepare the Jalapeños
Remove the stems and seeds from the jalapeños. Finely chop them and set aside.
Make the Cheese Sauce

Add Milk
Gradually add the milk while whisking to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

Add Cheese
Once thickened, reduce heat to low and slowly add the cheddar, Parmesan, and mozzarella cheeses. Stir until fully melted and combined. Season with salt, black pepper, garlic powder, and onion powder.
Combine and Serve

Combine Ingredients
In a large mixing bowl, combine the cooked macaroni, sliced Italian sausage, blackened chicken, and chopped jalapeños. Pour the cheese sauce over the mixture and stir until everything is well coated.

Transfer the mac and cheese to a serving dish. Optionally, top with extra cheese or jalapeños for garnish. Serve warm.
