For the Orzo and Vegetables

Method

Preparing the Salmon

  1. 1

    Make the Glaze

In a small bowl, whisk together honey, Sriracha sauce, soy sauce, minced garlic, salt, and pepper until well combined.

  2. 2

    Prep the Salmon

Preheat the broiler in your oven. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey Sriracha glaze generously over the salmon.

  3. 3

    Broil the Salmon

Broil the salmon for about 8-10 minutes, or until cooked through and flaky, basting with additional glaze halfway through cooking. Sprinkle sesame seeds on top before serving.

Cooking the Orzo and Vegetables

  1. 4

    Cook the Orzo

While the salmon is broiling, bring a medium pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

  2. 5

    Sauté the Spinach

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.

  3. 6

    Combine Orzo and Spinach

Add the cooked orzo and roasted red peppers to the skillet with the sautéed spinach. Drizzle with lemon juice and stir until heated through.

  4. 7

    Grill the Zucchini

In a separate skillet or grill pan, heat the remaining tablespoon of olive oil. Add the sliced zucchini and grill for about 4-5 minutes on each side, or until tender and lightly charred.
