Pasta

Method

Pasta Preparation

  1. 1

    Cook the Fettuccine

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Stir occasionally to prevent sticking.

  2. 2

    Drain and Set Aside

Once the pasta is cooked, reserve 1 cup of pasta water, then drain the pasta in a colander. Set aside.

Alfredo Sauce Preparation

  1. 3

    Melt the Butter

In a large saucepan over medium heat, melt the unsalted butter until it is completely liquid and begins to bubble.

  2. 4

    Add Garlic

Add the minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant but not browned.

  3. 5

    Stir in Heavy Cream

Gradually pour in the heavy cream while stirring. Allow the mixture to come to a gentle simmer.

  4. 6

    Add Cheese and Seasonings

Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt, black pepper, and grated nutmeg. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

Combine and Serve

  1. 7

    Combine Pasta and Sauce

Add the cooked fettuccine to the sauce, tossing to coat thoroughly. If using, add any optional add-ins such as cooked chicken, steamed broccoli, or sliced mushrooms.

  2. 8

    Serve

Serve the Alfredo pasta hot, garnished with extra Parmesan cheese and freshly cracked black pepper if desired.
