Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine 4 cups of all-purpose flour, 1 tsp of salt, and 2 tbsp of granulated sugar. Mix well.

Activate Yeast
In a small bowl, dissolve 2 tbsp of active dry yeast in 1 cup of warm water (110°F). Let it sit for 5-10 minutes until frothy.

Combine Wet Ingredients
In another bowl, whisk together 1 cup of warm milk, 1 cup of melted unsalted butter, and 2 large eggs until smooth.

Form Dough
Add the activated yeast mixture and wet ingredients to the dry ingredients. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Take 1 cup of cold unsalted butter and pound it into a flat square between two sheets of parchment paper. Refrigerate until firm.

Once the dough has risen, punch it down and roll it out into a large rectangle, about 1/4 inch thick.

Laminate Dough
Roll out the dough again to a rectangle and fold it in thirds like a letter. Wrap in plastic and refrigerate for 30 minutes. Repeat this process twice more for a total of three folds.

After the final fold, roll the dough out into a large rectangle again. Cut into triangles. Roll each triangle from the base to the tip and shape into a crescent.

In a mixing bowl, beat together 8 oz of cream cheese, 1 cup of powdered sugar, and 1 tsp of vanilla extract until smooth.

Fill Danishes
Using the same triangle dough, before rolling, place a spoonful of the cream cheese mixture in the center of the triangle and top with fresh fruit if desired.
Final Baking

Place the shaped croissants and danishes on a baking sheet lined with parchment paper. Cover with a cloth and let them rise for 30-45 minutes.

Preheat your oven to 400°F (200°C).
