    Prepare Potatoes

    Boil the Russet potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let cool slightly.

    Make Potato Mixture

    Peel the potatoes and mash them in a large bowl until smooth. Allow to cool completely.

    Form Dough

    Add the flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is sticky, add more flour, a tablespoon at a time.

    Shape Dumplings

    Divide the dough into smaller portions and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces to form dumplings. Use a fork to create ridges on each piece.

    Cook Dumplings

    Bring a large pot of salted water to a boil. Add the dumplings and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Vodka Sauce

    Sauté Aromatics

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and crushed red pepper flakes, sautéing for 1-2 minutes until fragrant.

    Add Vodka

    Carefully add the vodka to the skillet and let it simmer for 2-3 minutes, allowing the alcohol to cook off.

    Incorporate Tomatoes

    Stir in the diced tomatoes and simmer for about 5 minutes.

    Finish Sauce

    Add the heavy cream, Parmesan cheese, salt, and black pepper to the sauce, stirring until well combined. Simmer for an additional 5 minutes until thickened.

    Combine Dumplings and Sauce

    Add the cooked dumplings to the sauce, tossing gently to coat. Cook for an additional 2 minutes to heat through.

    Garnish

    Remove from heat and stir in the chopped fresh basil. Serve immediately, garnished with extra Parmesan if desired.
