Pancake Batter Preparation

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

Cinnamon Filling Preparation

    Mix Cinnamon Filling

    In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter until it forms a paste.

Cooking Pancakes

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

    Cook Pancakes

    Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Use a spoon to swirl about 1 tablespoon of the cinnamon filling on top of each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

    Carefully flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through. Remove from the skillet and keep warm.
