Method
Preparation of Chicken
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Begin by flattening the chicken breasts to an even thickness with a meat mallet or rolling pin. This ensures even cooking.
- 2
Bread the Chicken
Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with salt and pepper in a third. Dredge each chicken breast first in flour, then dip in eggs, and finally coat with breadcrumbs.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer to a baking sheet when done.
Assembly and Baking
- 4
Add Toppings
Spread the tomato sauce evenly over each piece of fried chicken. Sprinkle mozzarella cheese and Parmesan cheese on top.
- 5
Bake
Transfer the baking sheet to the preheated oven and bake for 15-20 minutes or until the cheese is melted and bubbly.
Sandwich Construction
- 6
Assemble the Sandwich
While the chicken is baking, slice the sub rolls in half. Once the chicken is done, place a piece of the cheesy chicken onto each roll, top with fresh basil, and close the sandwich.
- 7
Serve
Serve the Chicken Parmigiana Sandwich immediately while hot with additional tomato sauce on the side if desired.
