Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Season the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Set Up the Breading Station
In one shallow dish, place the flour. In a second shallow dish, beat the eggs. In a third dish, combine the grated Parmesan cheese with some salt and pepper.

Bread the Chicken
Dredge each seasoned chicken breast in the flour, shaking off the excess, then dip into the beaten eggs, and finally coat with the Parmesan cheese mixture.

Heat the Oil and Butter
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until hot.

Cook the Chicken
Add the breaded chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chicken broth and lemon juice, scraping the bottom to deglaze the pan. Bring the mixture to a simmer.

Add the remaining 2 tablespoons of butter to the sauce and whisk until melted and combined.

Return the chicken to the skillet, spoon the sauce over the chicken, and simmer for an additional 2 minutes. Serve immediately, garnished with fresh parsley if desired.
