Pasta Preparation

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook Cavatelli

    Add 2 cups of cavatelli pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.

    Drain Pasta

    Once cooked, drain the cavatelli in a colander and set aside.

Meat Sauce Preparation

    Sauté Onions and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of chopped onion and sauté until translucent, about 5 minutes. Add 3 minced garlic cloves and cook for an additional 1-2 minutes.

    Cook Ground Beef

    Add 1 lb of ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat if necessary.

    Add Tomatoes and Seasonings

    Stir in 28 oz of canned crushed tomatoes, 2 tablespoons of tomato paste, 1 tsp of dried oregano, 1 tsp of dried basil, 1 tsp of salt, and 1 tsp of black pepper. If using, add 1 cup of red wine. Bring to a simmer.

    Simmer Sauce

    Reduce heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally, until thickened.

    Combine Pasta and Sauce

    Add the drained cavatelli pasta to the meat sauce, tossing until the pasta is well coated. Cook for an additional 2-3 minutes to heat through.

    Serve

    Serve hot, topped with 1 cup of grated Parmesan cheese.
