Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well.

Incorporate Butter
Add the unsalted butter into the flour mixture and mix until the mixture becomes crumbly.

Add Egg and Liquid
Stir in the egg, white wine (or vinegar), and water until a dough forms. Knead on a floured surface until smooth.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll and Cut
Once chilled, roll out the dough to about 1/8-inch thickness. Cut into 3-inch circles.

Shape the Cannoli
Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

Fry the Shells
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the pastry tubes until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Filling
In a mixing bowl, combine the ricotta cheese and powdered sugar. Mix until smooth.

Stir in the vanilla extract and mini chocolate chips until evenly distributed.

Fill the Shells
Once the pastry shells have cooled, use a piping bag to fill each shell with the ricotta mixture.

Dust the filled cannoli with powdered sugar and sprinkle with chopped pistachios or chocolate shavings as desired.
