Main Ingredients

Breading and Seasoning

Method

Preparation of Ingredients

  1. 1

    Prepare the Chicken

Start by flattening the chicken breasts to an even thickness using a meat mallet. Season both sides with salt, black pepper, and paprika.

  2. 2

    Chop the Vegetables

Slice the bell peppers into strips and chop the onion into thin slices. Mince the garlic cloves.

Breading the Chicken

  1. 3

    Set Up Breading Station

In three separate bowls, place flour in the first bowl, beaten eggs in the second bowl, and breadcrumbs mixed with a pinch of salt and pepper in the third bowl.

  2. 4

    Bread the Chicken

Coat each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Cooking

  1. 5

    Fry the Chicken

In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

  2. 6

    Sauté the Vegetables

In the same skillet, add the sliced onions, bell peppers, and minced garlic. Sauté for about 5 minutes or until the vegetables are tender.

  3. 7

    Prepare the Wine Glaze

Pour in the white wine and chicken broth into the skillet with the sautéed vegetables. Allow to simmer for 3-5 minutes until slightly reduced.

  4. 8

    Combine Chicken and Sauce

Return the cooked chicken breasts to the skillet, spooning the wine glaze over them. Let cook for an additional 2 minutes to heat through.

Serving

  1. 9

    Plate the Dish

Serve the chicken breasts topped with the sautéed peppers and onions, drizzled with the wine glaze, and garnish with chopped fresh parsley.
