Preparation

    Prepare the Vegetables

    Finely chop the onion, carrot, and celery. Mince the garlic cloves.

    Cook the Pasta

    In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

Cooking the Bolognese Sauce

    Sauté the Base

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery and sauté for about 5-7 minutes until softened.

    Add Garlic and Meats

    Stir in the minced garlic and cook for an additional minute. Add the ground beef and ground pork to the pan, breaking it up with a spoon. Cook until browned, about 8-10 minutes.

    Deglaze with Wine

    Pour in the red wine and scrape the bottom of the pan to release any browned bits. Let it simmer until the wine is mostly evaporated, about 3-4 minutes.

    Add Tomatoes and Broth

    Stir in the crushed tomatoes, beef broth, bay leaves, oregano, basil, salt, and black pepper. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer uncovered for at least 30 minutes, stirring occasionally. If the sauce thickens too much, add a little water or broth.

    Finish with Milk

    Stir in the milk and let it cook for an additional 10 minutes. Remove the bay leaves before serving.

    Toss the cooked spaghetti with the Bolognese sauce until well coated.
