Marinated Chicken

    Prepare the Marinade

    In a bowl, mix balsamic vinegar, olive oil, minced garlic (pressed), honey, salt, and black pepper to create the marinade.

    Marinate the Chicken

    Add chicken breasts to the bowl with the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).

Sauteed Mushrooms

    Prepare the Mushrooms

    Clean and slice the mushrooms.

    Cook the Mushrooms

    In a skillet, melt butter over medium heat. Add sliced mushrooms, garlic powder, salt, and black pepper. Sauté for about 5-7 minutes until mushrooms are tender and golden.

Crispy Onions

    Prepare the Onions

    Slice the onion into thin rings and soak them in buttermilk for 30 minutes.

    Coat the Onions

    In a separate bowl, mix flour, cornstarch, salt, and black pepper. Dredge the soaked onion rings in the flour mixture.

    Fry the Onions

    Heat vegetable oil in a deep pan over medium-high heat. Fry the onion rings in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop potatoes into chunks. Boil in salted water until tender, approximately 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Assembly

    Plate the Dish

    On a plate, create a bed of arugula. Place grilled chicken on top, add sautéed mushrooms, and serve alongside a scoop of mashed potatoes. Top with crispy onions.
