Method

Preparation of Cod

  1. 1

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare Cod

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and paprika to create a marinade. Place the cod fillets in a baking dish and pour the marinade over them, ensuring they are well coated. Let it marinate for about 15 minutes.

Cooking Orzo and Spinach

  1. 3

    Cook Orzo

In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 4

    Add Spinach

Once the orzo is cooked, stir in the fresh spinach and red pepper flakes. Cook for an additional 2-3 minutes, until the spinach has wilted. Remove from heat and stir in the grated Parmesan cheese until well combined.

Baking Cod

  1. 5

    Bake the Cod

While the orzo is cooking, place the marinated cod in the preheated oven. Bake for 12-15 minutes, or until the fish flakes easily with a fork.

Serving

  1. 6

    Plate the Dish

On a serving plate, layer the orzo and spinach mixture first, then top it with a baked cod fillet. Optionally, garnish with additional Parmesan cheese and lemon wedges.
