Prepare the Polenta
In a saucepan, bring 4 cups of water to a boil. Slowly whisk in the polenta, reduce heat to low, and cook, stirring frequently, until thickened (about 15-20 minutes). Add salt and stir in a tablespoon of olive oil. Keep warm.

Cook the Shrimp
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes per side.

Add the Tomatoes and Wine
Add the halved cherry tomatoes to the skillet along with the white wine. Simmer for 5 minutes until the tomatoes soften and the sauce reduces slightly.

Finish the Dish
Stir in the lemon juice and chopped parsley. Season with salt and black pepper to taste.

Serve
Serve the shrimp mixture over the warm polenta and enjoy with slices of focaccia.
