1. Prepare the Sauce
In a saucepan, combine the halved onion and cherry tomatoes with the butter. Season with salt. Cook over medium heat for about 30 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens. Remove the onion before serving.
2. Cook the Pasta
In a large pot of salted boiling water, cook the mezzi rigatoni according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
3. Cook the Shrimp
In a large skillet, heat a little olive oil over medium heat. Add the shrimp and season with black pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through.
4. Combine and Serve
Add the cooked mezzi rigatoni to the skillet with the shrimp. Pour the prepared tomato sauce over the pasta and toss to combine. If the sauce is too thick, add some reserved pasta water to reach the desired consistency. Serve immediately, garnished with fresh basil.
