    Prepare the lamb

    Season the lamb chunks with salt and black pepper.

    Sear the lamb

    In a large pot, heat the olive oil over medium-high heat. Add the lamb chunks and sear until browned on all sides. Remove the lamb and set aside.

    Sauté the vegetables

    In the same pot, add chopped onions, carrots, and celery. Sauté until they are soft and translucent, about 5-7 minutes.

    Deglaze with wine

    Pour in the red wine, scraping the bottom of the pot to remove any browned bits. Bring to a simmer.

    Add remaining ingredients

    Return the seared lamb to the pot. Add roasted garlic, bay leaves, and broth. Stir to combine.

    Braise the lamb

    Cover the pot and let it braise on low heat for about 2 hours or until the lamb is tender and falling apart.

    Finish with mint

    Once cooked, stir in the chopped mint leaves. Adjust seasoning if necessary.

    Serve the maltagliati with the braised lamb on top, spooning the sauce over the dish.
