    Prepare the Lamb

    Preheat your oven to 325°F (163°C). Season the lamb shoulder generously with salt, pepper, and thyme. In a large oven-safe pot, heat olive oil over medium-high heat.

    Sear the Lamb

    Add the lamb shoulder to the pot and sear on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the onion, garlic, and carrots. Sauté until softened, about 5 minutes.

    Add Celery Root

    Stir in the diced celery root and cook for an additional 5 minutes until slightly caramelized.

    Prepare Tomato Confit

    Add the compari tomatoes to the pot and mix well. Return the lamb shoulder to the pot and pour in the chicken broth.

    Braise

    Cover the pot and transfer it to the preheated oven. Braise for about 2.5 to 3 hours, until the lamb is fork-tender.

    Cook the Kale

    In the last 15 minutes of cooking, add the chopped kale to the pot. Stir it in and cover again to allow it to wilt.

    Serve

    Once cooked, remove the lamb from the pot and let rest for 10 minutes before slicing. Serve with the caramelized vegetables and kale.
