1. Marinate the Chicken

In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

2. Cook the Quinoa

Rinse quinoa under cold water, then combine with 2 cups of water in a pot. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until all water is absorbed. Fluff with a fork.

3. Roast the Vegetables

Toss mixed vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20 minutes, until tender.

4. Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

5. Serve

On a platter, arrange the grilled chicken, quinoa, and roasted vegetables. Garnish with fresh herbs.
