Prepare ingredients

Chill a coupe or martini glass in the freezer or fill it with ice water to chill while you mix the cocktail. Juice a lemon to obtain at least 0.5 oz of fresh lemon juice. If using egg white, separate and reserve half an egg white (about 0.5 unit).

Dry shake (if using egg white)

Combine gin, dry vermouth, elderflower liqueur, fresh lemon juice, simple syrup, orange bitters, and the egg white in a cocktail shaker without ice. Dry-shake vigorously for 10–15 seconds to emulsify and create foam.

Shake with ice

Add a generous scoop of ice to the shaker. Shake vigorously for 12–15 seconds until the shaker feels very cold (this chills and dilutes the drink appropriately).

Fine strain

Discard ice from the chilled glass if you used it to chill. Double-strain the cocktail into the chilled coupe or martini glass using the shaker strainer and a fine-mesh strainer to remove ice shards and achieve a silky texture.

Garnish & Serve

Express the oils of a lemon twist over the surface of the cocktail by holding the twist over the glass and giving it a quick squeeze, then rim the glass with the twist and drop it into the drink.

Optionally float an edible flower or a small mint sprig on the foam for a fragrant, elegant presentation. Serve immediately.

Rinse the shaker and strainers promptly to prevent egg white residue from drying. If you prefer a vegan/egg-free version, omit the egg white and increase dry shake time or add 0.25 oz aquafaba as a substitute.
