Prepare the Curtido
In a large bowl, mix together the shredded cabbage, grated carrots, sliced red onion, lime juice, salt, and pepper. Let it sit for at least 30 minutes to allow the flavors to meld.

Prepare the Baja Sauce
In a separate bowl, combine mayonnaise, chipotle in adobo sauce, garlic powder, and chopped cilantro. Mix well and set aside.

Bread the Cod
In a shallow dish, beat the eggs. In another shallow dish, combine masa harina, cornmeal, salt, and black pepper. Dip each cod fillet into the egg mixture, then dredge in the masa mixture, ensuring they are fully coated.

Fry the Cod
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded cod fillets and fry for 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

On serving plates, place a few pieces of fried cod, top with sliced avocado, a generous amount of curtido, and a drizzle of Baja sauce.
