1. Prepare the coffee
Brew 240 ml of strong coffee and let it cool to room temperature. Once cooled, optionally stir in 30 ml of coffee liqueur for added flavor.
2. Prepare the egg mixture
In a mixing bowl, separate the egg whites and yolks. Whisk the egg yolks with 100 g of granulated sugar and 1 tsp of vanilla extract until the mixture is pale and creamy.
3. Combine mascarpone
Gently fold in 500 g of mascarpone cheese into the egg yolk mixture until smooth and well combined.
4. Whip the cream
In a separate bowl, whip 200 ml of heavy cream until soft peaks form. Then, carefully fold the whipped cream into the mascarpone mixture until fully incorporated.
5. Beat the egg whites
In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture, being careful not to deflate the batter.
6. Assemble the tiramisu
Dip each ladyfinger into the cooled coffee mixture for just a second to soak them. Layer half of the soaked ladyfingers in the bottom of a rectangular dish.
7. Layer the cream mixture
Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.
8. Repeat the layers
Add another layer of soaked ladyfingers followed by the remaining mascarpone mixture. Smooth the top layer.
9. Chill the tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
10. Serve
Before serving, dust the top with 30 g of cocoa powder for a finishing touch. Cut into squares and enjoy your homemade tiramisu!
