Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes.

Prepare the Pancetta
While the spaghetti is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.

Mix the Eggs and Cheese
In a medium bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.

Combine Pasta with Pancetta
Once the spaghetti is cooked, reserve 1 cup of pasta water and drain the rest. Quickly add the hot spaghetti to the skillet with the pancetta, and toss to combine.

Create the Sauce
Remove the skillet from heat. Pour the egg and cheese mixture over the spaghetti and toss quickly to coat. The heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately, garnished with additional Pecorino Romano cheese and freshly cracked black pepper to taste.
