Method

Syrup Preparation

  1. 1

    Prepare the Roots

In a large pot, combine the sassafras root, sarsaparilla root, and birch bark with 4 cups of water.

  2. 2

    Boil the Mixture

Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 30 minutes.

  3. 3

    Strain the Liquid

After simmering, remove from heat and strain the liquid through a fine mesh sieve into a bowl, discarding the solids.

  4. 4

    Add Sweetness and Flavor

To the strained liquid, add the brown sugar, vanilla extract, and lemon juice. Stir until the sugar is completely dissolved.

  5. 5

    Fermentation (Optional)

If you'd like a slightly fermented flavor, add the yeast to the syrup mixture and allow it to sit at room temperature for 24 hours.

  6. 6

    Cool the Syrup

Allow the syrup to cool to room temperature, then refrigerate until ready to use.

Making the Root Beer

  1. 7

    Combine Syrup and Carbonated Water

In a large pitcher, mix 1 cup of the prepared syrup with 4 cups of carbonated water. Adjust the syrup quantity to taste.

  2. 8

    Serve with Ice

Fill glasses with ice and pour the root beer mixture over the ice.

  3. 9

    Garnish (Optional)

Garnish with a slice of lemon or a sprig of mint if desired.
