Gelato Base Preparation

    Combine Milk and Cream

    In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream over medium heat. Stir occasionally until the mixture is warm but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and fluffy.

    Temper the Egg Yolks

    Gradually add a small amount of the warm milk mixture to the egg yolks while whisking constantly to temper them. This prevents the yolks from cooking. Once combined, slowly pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture.

    Cook the Base

    Continue to cook the mixture over medium heat, stirring constantly until it thickens slightly and coats the back of a spoon. Do not let it boil.

    Chill the Base

    Remove the saucepan from heat and pour the mixture into a bowl. Cover with plastic wrap and refrigerate until completely chilled, at least 4 hours or overnight.

Flavoring

    Vanilla Flavoring

    Once the base is chilled, stir in 1 teaspoon of vanilla extract for the vanilla gelato version.

    Chocolate Flavoring

    For chocolate gelato, add 1 cup of unsweetened cocoa powder and 1 cup of chocolate chips to the chilled base and mix well.

Churning and Freezing

    Churn the Gelato

    Pour the flavored base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm before serving.
