Prepare the Filling
In a mixing bowl, combine ricotta cheese, grated romano cheese, one egg, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Make the Dough
In a large bowl, whisk together the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually incorporate the flour into the eggs using a fork until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Marinara Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally. Stir in fresh chopped basil at the end.

Form the Ravioli
Roll out the rested dough into thin sheets using a pasta machine or rolling pin. Cut the sheets into squares of about 3x3 inches. Place a small spoonful of the filling in the center of half of the squares. Moisten the edges with water, then fold the squares over to create a triangle, sealing the edges tightly. Make sure there are no air pockets.

Serve the Dish
Plate the fried ravioli and top with marinara sauce. Sprinkle grated parmesan cheese on top and garnish with fresh basil leaves. Serve immediately.
