Method
Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Begin by flattening the chicken breasts to an even thickness of about ½ inch using a meat mallet or rolling pin. This ensures even cooking.
- 2
Season the Chicken
Season both sides of the chicken breasts with salt and pepper.
- 3
Dredging Station
Set up a dredging station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with a mixture of bread crumbs and grated Parmesan cheese.
- 4
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip it into the beaten eggs, allowing excess to drip off, and finally coat it with the bread crumb and Parmesan mixture. Press the crumbs onto the chicken to ensure good coverage.
Cooking
- 5
Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
- 6
Add Toppings
Place the fried chicken breasts in a baking dish. Top each breast with about ¼ cup of marinara sauce and ¼ cup of mozzarella cheese.
- 7
Bake
Transfer the baking dish to the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
- 8
Garnish and Serve
If using, garnish with fresh basil leaves before serving. Enjoy your Chicken Parmesan hot with pasta or a side salad.
