Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari
Dip each calamari ring into the egg wash, allowing excess to drip off, then coat it in the flour mixture. Set aside on a plate.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Prepare Garlic and Basil
Mince the garlic cloves and chop the fresh basil leaves finely.

Mix Aioli Ingredients
In a bowl, combine the mayonnaise, minced garlic, chopped basil, lemon juice, salt, and black pepper. Stir until well combined.

Chill the Sauce
Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.
