Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Broth

    Once the onions are caramelized, add the minced garlic and cook for an additional 2 minutes. Pour in the beef broth and white wine, and stir to combine.

    Season the Soup

    Add the thyme, bay leaf, salt, and black pepper to the pot. Bring the soup to a simmer and let it cook for about 20 minutes to let the flavors meld.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls and top with toasted bread and grated cheese. Place under the broiler for a few minutes until the cheese is melted and bubbly.
