Prepare the Duck

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Sear the Duck

In a large skillet, heat olive oil over medium-high heat. Place duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and golden brown.

Flip and Cook

Flip the duck breasts and cook for another 4-5 minutes for medium-rare, or longer if desired. Remove the duck from the skillet and let it rest.

Make the Sauce

In the same skillet, add minced garlic and fresh rosemary. Sauté for about 1 minute until fragrant. Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Simmer until reduced by half.

Finish the Sauce

Whisk in butter until melted and the sauce is smooth. Season with additional salt and pepper to taste.

Slice the rested duck breasts and serve with the sauce drizzled over the top.
