Cooking Quinoa

    Rinse and Cook Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.

    Chop Vegetables

    While the quinoa is cooking, chop the cucumber into small cubes, halve the cherry tomatoes, and slice the avocado in half to remove the pit. Scoop out the flesh and slice it into thin pieces.

    Wash Spinach

    Rinse the spinach thoroughly under cold water and pat dry with a paper towel.

Mixing Ingredients

    Combine Ingredients

    In a large mixing bowl, combine the cooked quinoa, canned black beans (drained and rinsed), canned chickpeas (drained and rinsed), chopped cucumber, halved cherry tomatoes, and spinach.

Adding Dressing

    Prepare and Add Dressing

    In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lime juice, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cumin. Pour the dressing over the quinoa and vegetable mixture and gently toss to combine.

Serving

    Scoop the mixture into bowls and top with sliced avocado. Serve immediately and enjoy your delicious vegan bowl!
