Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan evenly.

Bake the crust
Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and let it cool while you prepare the cheesecake filling.

Mix the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar and continue to beat until combined.

Add sour cream and vanilla
Mix in the sour cream and vanilla extract until fully incorporated.

Incorporate the eggs
Add the eggs, one at a time, beating on low speed until just blended. Avoid overmixing.

Pour into crust
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

Bake the cheesecake
Bake in the oven for 40-50 minutes, or until the center is set and the edges are lightly golden. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill the cheesecake
Remove the cheesecake from the oven, and let it come to room temperature before refrigerating for at least 4 hours, preferably overnight.

Prepare the coulis
In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes.

Strain the coulis
Remove from heat and strain the mixture through a fine mesh sieve to remove seeds, if desired. Let it cool before serving.
