1

Prepare the Ricotta Spread

In a medium bowl, combine the ricotta cheese, lemon juice, salt, and black pepper. Whip together until smooth and creamy.

2

Toast the Noble Bread

Toast the slices of noble bread until golden brown. This will enhance the flavor and provide a nice texture.

3

Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding a pinch of salt and black pepper to taste.

4

Poach the Eggs

Bring a saucepan of water to a gentle simmer. Crack each egg into a small bowl, then carefully slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.

5

Assemble the Tartines

Spread a generous amount of the whipped ricotta on each slice of toasted noble bread. Top with mashed avocado, followed by slices of smoked salmon. Add a few capers on top of the salmon.

6

Add Poached Eggs

Place one poached egg on top of each tartine. Season with additional salt and black pepper if desired.

7

Prepare the Salad

In a bowl, toss the mixed greens with olive oil, salt, and black pepper. Serve alongside the tartines.

8

Serve with Fruit

Serve the tartines with a cup of the fruit of the day on the side for a refreshing finish.
