    Prepare the Tortilla Strips

    Cut the corn tortillas into strips about 1 inch wide. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the tortilla strips and fry until golden and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Cook the Vegetables

    In the same skillet, add another tablespoon of olive oil. Sauté the diced onion and bell peppers until softened, about 5-7 minutes. Season with salt and black pepper.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs and half of the queso asadero until well combined. Season with a pinch of salt and black pepper.

    Cook the Eggs

    Pour the egg mixture into the skillet with the sautéed vegetables. Stir gently to combine. Cook on low heat until the eggs are set, about 5-7 minutes.

    Compile the Dish

    Once the eggs are cooked, remove the skillet from heat. Top the migas with the crispy tortilla strips, remaining queso asadero, diced avocado, and pico de gallo.
