Huevos Rancheros Ingredients

Method

Huevos Rancheros Directions

  1. 1

    Prepare the tortillas

Heat a skillet over medium heat and add 1 tablespoon of cooking oil. Once hot, place 2 corn tortillas in the skillet and cook for about 1 minute on each side until slightly crispy. Remove and set aside. Repeat with the remaining tortillas.

  2. 2

    Melt the cheese

In the same skillet, add another tablespoon of cooking oil if needed. Place one tortilla back in the skillet, sprinkle half of the asadero cheese over it, and top with another tortilla. Cook until the cheese starts to melt, about 2-3 minutes. Flip and cook the other side until golden brown. Remove and repeat with the remaining tortillas and cheese.

  3. 3

    Cook the eggs

In a separate pan, crack the eggs and cook them to your preference (fried, scrambled, or poached). Season with salt and black pepper during cooking.

  4. 4

    Add the sauce

Once the eggs are cooked, place them on top of the quesadillas. Pour your choice of ranchero sauce, chilaquiles salsa, or xmas sauce over the eggs.

  5. 5

    Serve

Plate the huevos rancheros and enjoy them hot, garnished with fresh cilantro or avocado if desired.
