    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a baking dish (about 8x8 inches) with parchment paper, leaving some overhang for easy removal.

    Mix Wet Ingredients

    In a large mixing bowl, combine the mashed banana, honey (or maple syrup), and melted coconut oil. Mix until well combined and smooth.

    Combine Dry Ingredients

    In a separate bowl, mix the rolled oats, baking powder, salt, and cinnamon together until evenly distributed.

    Combine Wet and Dry Mixtures

    Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

    Transfer to Baking Dish

    Pour the flapjack mixture into the prepared baking dish and spread it out evenly using a spatula.

    Bake

    Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

    Allow the flapjacks to cool in the baking dish for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares.
