Preparation of Shrimp

    Poach the Shrimp

    In a pot of boiling salted water, add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the pot and place them in an ice bath to stop the cooking process. Drain and set aside.

Mixing Ingredients

    Combine the Ingredients

    In a large mixing bowl, combine the poached shrimp, diced cucumber, avocado, jicama, and pico de gallo. Toss gently to combine.

    Add the Dressing

    In a small bowl, whisk together the tomato juice, lime juice, salt, and pepper. Pour this mixture over the shrimp and vegetable mix. Gently toss to coat everything evenly.

Serving

    Plate the Coctel

    Serve the coctel de camarón in individual bowls or cups. Accompany with tortilla chips on the side.
