Prepare the Filling
In a mixing bowl, combine ground pork, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully incorporated.
Fill the Dumplings
Place a gyoza wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges with water, fold the wrapper in half, and pinch to seal, creating pleats if desired. Repeat the process with the remaining wrappers and filling.
Cook the Gyoza
Heat a non-stick skillet over medium-high heat and add a little oil. Arrange the gyoza in the skillet, making sure they do not touch. Fry for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 50 ml) to the skillet, cover immediately, and steam for 5-6 minutes until the water has evaporated and the gyoza are cooked through.
Serve
Remove the gyoza from the skillet and serve hot with soy sauce or your favorite dipping sauce.
