Prepare the Pork Belly

Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut too deeply into the meat. Rub the salt and pepper all over the pork belly.

Sear the Meat

In a large, oven-safe pot or Dutch oven, heat a little oil over medium-high heat. Sear the pork belly skin-side down for about 5-7 minutes until the skin is crispy and golden. Flip and sear the other side for another 5 minutes. Remove the pork belly and set aside.

Sauté Aromatics

Add chopped onion, minced garlic, and sliced ginger to the pot. Sauté for about 3-4 minutes until fragrant and softened.

Add Liquid and Braise

Return the pork belly to the pot. Add soy sauce, rice vinegar, water, brown sugar, and star anise. Bring the mixture to a simmer.

Braise in the Oven

Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the pork is tender.

Finish and Serve

Remove the pork belly from the pot and let it rest for 10 minutes before slicing. Strain the braising liquid and reduce it in a saucepan if desired. Serve the sliced pork belly garnished with chopped green onions.
