Soak the Mung Beans
Rinse the mung bean seeds under cold water and soak them in a bowl with 4 cups of water for 8-12 hours.
Drain and Rinse
After soaking, drain the water and rinse the beans thoroughly.
Sprout the Beans
Place the rinsed beans in a sprouting jar or container, cover with a breathable cloth, and let them sit in a dark, warm place for 2-5 days, rinsing them with water every 8-12 hours until they sprout.
Prepare the Dressing
In a small bowl, combine soy sauce, sesame oil, minced garlic, and salt. Mix well.
Toss the Sprouts
Once the bean sprouts are ready, toss them in a bowl with the dressing and chopped green onions.
Serve
Serve the bean sprouts as a fresh salad or a side dish.
