Prep the Bamboo Shoots
If using fresh bamboo shoots, peel and slice them thinly. If using canned bamboo shoots, drain and rinse them under cold water.
Heat Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add Aromatics
Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.
Stir-Fry Bamboo Shoots
Add the sliced bamboo shoots to the skillet and stir-fry for about 5 minutes until they are heated through and slightly caramelized.
Season the Dish
Pour in the soy sauce, sesame oil, and sugar. Stir well to combine and cook for another 2-3 minutes. Adjust salt to taste.
