1. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt and black pepper.
2. Combine Filling
In a large bowl, combine the sautéed vegetables with the shredded carne asada and shredded Monterey Jack cheese. Mix well.
3. Prepare Egg Rolls
Lay an egg roll wrapper on a clean surface, with a corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides in and roll tightly, sealing the top corner with a little water.
4. Fry the Rolls
In a deep skillet or fryer, heat oil to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
5. Serve
Serve hot with your favorite dipping sauce.
